The Traditional Dutch Recipe for Apple Pie

Ready in: 1 hour, Serves: 12

Ingredients:

For the Single Pie crust:

two eggs,

4 cups self-rising flour (500 g),

1 1/3 cup cubed ice cold butter (300 g),

1 cup brown sugar (175 g),

A pinch of salt,

Zest of 1/2 lemon,

Filling:

four lbs tart apples (1.85 kg),

Juice of 1/2 lemon,

1/3 cup brown sugar (75 g),

2 tsp ground cinnamon,

1 tsp pumpkin pie spices,

1 tbsp corn starch (corn flour),

Streusel Topping:

1/8 cup brown sugar,

cup + 1 Tablespoons flour,

lemon zest,

1 teaspoon nutmeg,

1 teaspoon cinnamon,

1/2 teaspoon salt,

1/2 cup butter,

1/2 cup chopped walnuts,

You might also require a big spring type cake pan (24 cm x 6.5 cm/10" x 2 1/2")

The Steps:

Pre-heat the oven to 347 degrees F (175 degrees C).

With a big bowl, sift in flour. In another mixing bowl, beat the eggs. Decant the majority of the beaten eggs into the bowl of flour, saving roughly a tablespoon of egg away for later.

Add cubed butter, one cup of brown sugar, salt along with lemon zest. Work on the dough dough manually or with a stand mixer that has a dough attachment. Massage well and shape the dough to produce a ball. Reserve for 20 minutes.

For the meantime, prepare the pie filling: cleanse, peel and then core the apples. Chop them up into tiny bite-sized bits and put into a huge container. Mix in lemon juice, the remaining 1/3 cup brown sugar, along with spices. Drizzle with all the corn starch (corn flour) over and then blend adequately.

Make the streusel topping. Using a medium container, blend together 1/8 cup brown sugar, cup + 1 tbsp. flour, nutmeg, cinnamon and salt. By using a pastry blender, blend in butter to break down. Add chopped nuts

Grease the pie tin and spread the dough evenly right through the base and edges of your dish. Pour out apple mixture evenly to the pie plate and lightly force down. Retract the excess dough back in into the pie in order to avoid adhering on the pie plate. Disperse the streusel topping equally above the filling.

Slather the pie corners with the set-aside tablespoon of egg wash and then position in pre-heated oven in order to cook for about an hour. Pull off from the oven.

Put aside to cool in the cake pan and slowly flip out.

Serve Dutch Apple Pie next to whipped cream, or vanilla or cinnamon ice-cream.
